2 tablespoons butter 1 large onion 1 large rib celery 1 large bell pepper 2 cloves garlic 1 teaspoon dried basil 1/2 teaspoon dried thyme 1 15oz. can stewed tomatoes 1/2 teaspoon sugar 1 1/2 cup seafood stock or clam juice (see cooking tips section) 1/2 cup white wine or vermouth 1 tablespoon Cajun's Choice Creole Seasoning 1 lb. peeled and cleaned medium shrimp Cooked Rice Chop celery, onion, bell pepper and canned tomatoes. Mince garlic.
In large skillet, melt butter over med-hi heat. Add celery, onion, bell pepper, basil, thyme and Cajun's Choice Creole Seasoning. Cook about 15 minutes until soft. Add tomatoes, garlic, sugar, seafood stock and wine. Reduce heat and simmer for 15 minutes. Add shrimp and cook another 10 minutes. Serve over cooked rice.
